Ingredients:
  • 2/3 cup olive oil
  • 8 smashed garlic cloves
  • 4 diced onions
  • 10 cups water
  • 2 cups red lentils
  • 6 large carrots
  • 6 ounces tomato paste
  • 6 tablespoons tamari
  • 1/4 cup black pepper
  • 4 stalks celery
  • Lentil soup — aside from being a staple in our household — is a hearty and nutritious meal. Lentils are high in protein, fiber, and iron, making the soup a healthy and filling meal. This stove top meal can quickly be thrown together on a busy day and makes for a delicious dinner!

    Cooking instructions

    Note: You can use green or black lentils, but will need to cook a little longer. 
     
    1. Heat most of the olive oil in a large soup pot set to a medium temperature
    2. Sauteé onions until they begin to soften (about 5 minutes)
    3. Add garlic and stir mixture often until everything is very soft, but not yet browned
    4. Add celery and carrots and cook for another 10 minutes
    5. Add water, tomato paste, tamari and pepper
    6. Stir thoroughly, making sure the tomato paste is thoroughly mixed in
    7. Bring soup to a boil, then lower to a simmer
    8. Cook for about one hour, stirring occasionally, loosely covered with a lid so that steam can escape
      • Add a little more water if needed
    9. Test the carrots and celery to make sure they are soft. Once they are, remove the lid for a few minutes. This allows the soup to thicken
    10. Add more tamari or salt to taste
    11. Stir in remainder of olive oil right before serving
