Ingredients:

  • This recipe is something I've been making for a few years now, and I find keeping it simple is best. I've chosen Yukon Gold potatoes over the others as they provide a buttery and creamy texture to the dish.

     

    In addition to the vegan butter substitute, this recipe calls for oat milk, which provides a rich and creamy texture that complements the potatoes perfectly. Using non-dairy milk alternatives is a great way to add creaminess to dishes without using animal products.

     

    The addition of onion powder and garlic powder enhances the flavor of the mashed potatoes without adding any texture, making them smooth and creamy. It's important to taste the potatoes throughout the seasoning process and adjust each seasoning as needed to ensure the dish is well-balanced and flavorful.

    Cooking Instructions:

    1. Peel and cube the potatoes and place them in a large pot. Fill the pot with enough water to barely cover the potatoes.

    2. Set the instant pot to the pressure cook setting for 10 minutes. Quick release when the time is up.

      • Test the tenderness of the potatoes by piercing them with a fork; if they easily slide off, they're done.

    3. Drain the potatoes and return them to the pot.

    4. Add the vegan butter, salt, and pepper.

    5. Gradually add in the oat milk while mashing the potatoes with a potato masher until they reach your desired consistency.

    6. Add the onion and garlic powder, continuing to mash until the potatoes are fluffy and creamy.

    7. Taste the mashed potatoes and adjust the seasoning as needed, adding more salt or pepper to taste.

    8. Serve hot and enjoy!

     

    Note: You can also add in other herbs or spices, such as rosemary, thyme, or paprika, to give the mashed potatoes a different flavor. I personally like a little bit of spice in everything I eat, so I add a dash of paprika. Frank's RedHot powder is also a delicious addition!
